  3. 2 cups granulated sugar 14 oz, I use extra fine sugar, Bakers Sugar
  4. 3/4 teaspoon salt
  5. 1/4 teaspoon baking powder
  6. 1 teaspoon espresso powder or coffee extract
  7. 3 large eggs room temperature
  8. 8 tablespoons unsalted butter melted and slightly cooled
  9. 1/4 cup vegetable oil
  10. 2 teaspoons vanilla extract
  11. 1/2 cup bittersweet chocolate chips or chopped chocolate, optional
