  1. 15 chiles dried japones, or 10 dried chiles de u00e1rbol or 3 Tbs. sambal oelek
  2. 1 1/2 cups sliced shallots from 4 large shallots
  3. 2 tablespoons garlic sliced
  4. 1 tablespoon peeled fresh ginger sliced
  5. 1 tablespoon galangal chopped fresh or frozen and thawed, optional
  6. 4 whole cloves
  7. 4 whole green cardamom pods
  8. 2 whole star anise
  9. 1 cinnamon stick 3-inch-long, snapped in half
  10. 2 teaspoons ground coriander
  11. 2 teaspoons ground cumin
  12. 2 teaspoons fennel seeds ground
  13. 1 teaspoon ground turmeric
  14. 1/2 teaspoon ground black pepper freshly
  15. 3/4 cup canola oil ; more as needed
  16. 2 pounds beef chuck boneless top blade, or bottom or top round, flank, or sirloin steak, cut into 1/2-inch-thick slices, then cut into 1-1/2- to 2-inch pieces
  17. 13 1/2 ounces unsweetened coconut milk
  18. 1/4 cup tamarind concentrate
  19. 3 lime leaves wild, thinly sliced
  20. 2 lemongrass stalks medium, bruised with back of knife and tied in a knot
  21. 4 teaspoons palm sugar or dark brown sugar
  22. 2 1/2 teaspoons table salt
  23. 1/2 cup coconut tightly packed grated fresh, or unsweetened frozen coconut, thawed
  24. 1/4 cup chopped fresh cilantro coarsely, for garnish, optional
  25. lime wedges for garnish, optional
