  3. shells spot prawn, from tails, see below
  4. 3/4 cup water
  5. 1 pinch saffron
  6. 1/4 cup warm water
  7. 2 cups spot prawn tails, 18-20 prawns, shell-on
  8. 1 tablespoon butter
  9. 1 tablespoon olive oil
  10. 15/16 cup white onion diced, ~1.25 cups or 1/2 large onion
  11. 4 cloves garlic
  12. 3 3/8 cups diced tomatoes
  13. 1/2 teaspoon salt or to taste
  14. 3/4 pound pasta nero di seppia, squid ink, I used spaghetti, but other long/thin types are fine too
  15. 1/2 cup mascarpone
  16. flat leaf parsley finely chopped, to serve
