  4. 2 stalks celery chopped
  5. 1 carrot peeled and chopped
  6. 2 cloves garlic peeled and crushed
  7. 1/2 cup dry sherry cognac, or brandy
  8. 1 tablespoon tomato paste
  9. 1 teaspoon tarragon roughly chopped
  10. 4 cups shellfish or lobster stock, I used Bar Harbor brand
  11. 1/4 cup heavy cream warmed
  12. 2 teaspoons cornstarch potato starch, or tapioca flour
  13. salt
  14. white pepper
  15. cru00e8me frau00eeche or truffle oil, to garnish
  16. lobster meat Sauteed, to garnish, optional
