  2. 5 7/8 tablespoons honey
  3. 3 pieces lemon zest
  4. vanilla pod A split, or cinnamon stick or both
  5. 1 7/8 cups water
  6. puff pastry A sheet of ready-rolled
  7. 15/16 cup ground almonds
  8. 7 tablespoons butter
  9. 1 egg
  10. 2 3/4 tablespoons coconut palm sugar or golden muscovado sugar
  11. 2 1/3 cups water
  12. 1 cup sugar Natvia or an unrefined
  13. 7/8 cup unsweetened cocoa powder I used raw cacao powder. Just make sure you donu2019t use drinking chocolate powder!

  15. 1 cup milk chocolate or quality dark, finely chopped, I used 54% Callebaut N811 nibs
  16. 1/2 teaspoon vanilla paste or extract
  17. 1 cup whole milk
  18. 6 tablespoons salted butter cubed
  19. 5 tablespoons coconut palm sugar or light brown unrefined sugar
  20. 1 3/8 cups milk chocolate or dark, chopped, I used Callebaut 54% N811
  21. 1 teaspoon vanilla paste or extract
  22. 1 pinch sea salt
